Quick Lemon-Garlicky Cabbage Salad

Delicious & easy. Top with tart berries or pomegranate arils.

  • 2 cloves minced garlic
  • 1/2 teaspoon sea salt
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 cups chopped green cabbage
  • 2 tablespoons minced fresh mint leaves
  • Berries or arils

Mix garlic, sea salt, lemon juice, and olive oil. Add cabbage and mint and toss. Serve at once or refrigerate and bring to room temperature to serve. Top with arils or berries.
